During the Middle Ages "cesonate" were the vineyard areas protected by woods and hedges. A Satèn, which in Franciacorta describes a sparkling wine with a softer effervescence, made exclusively from white grapes. It is produced in the highest vineyards of Franciacorta. Slowly maturing vines and low levels of production allow the grapes to devolop delicate aromas and a non-aggressive acidity. The result is a wine that is both elegant on the palate and floreal on the nose.

The vineyards from which Cesonato is made lie on shallow, morenic soil and are characterized by the presence of numerous pebbles of fluvial origin.
